Not just that--a large number of early insiders are extremely fond of military history and military hardware, making for a huge bias in that direction.
Wikiproject Military History is still one of the top projects in terms of activity -- currently assessing 126,000 articles.
By comparison, Wikiproject History (meaning all history, I presume) only has 19,000 articles.

It seems to me that war is an extremely important event in the history of most nations. I see nothing odd in war getting more coverage than say international baseball competitions.

You are overthinking it. Its nothing to do with how 'important' conflict is. (Although it is given its effect on population, technology, social & economic growth etc).

Wikipedia is written pre-dominantly by late teen to 40 year old men.

They like action & guns, history is full of such, so war will be the natural starting point. Sports will be next, as its basically 'war-without-weapons'. Except for ice hockey. Go Devils!
